Hearty Bean Soup

dice the onion

mince the  garlic cloves

dice the carrots

chop the parsley

purée 1 can of beans together with 1 cup chicken broth

heat oil  over medium, add bacon

cook until crispy, remove from pot

add onion, garlic and carrots, cook for 3 minutes

stir in pepper,  paprika, Italian seasoning and tomato paste

add the remaining  beans and  puréed beans

pour in  chicken broth

add bay leaf and pearl couscous, bring to a boil, cover and cook for 15 minutes

when ready, turn off the heat, add bacon

stir in Parmesan

finish off with  parsley, and  black pepper
