Garlic Tomato Chicken with Mozzarella

finely chop the shallot

mince the garlic

chop the mozzarella

season the chicken on both sides

heat oil and butter in a skillet

add chicken

cook,  5 minutes per side

remove from skillet

add garlic and shallot, cook for 2 minutes

deglaze with white wine, simmer for 2 minutes

add spices and tomato paste, stir for 1 minute

pour in chicken broth, stir to combine

add canned cherry tomatoes, bring to a boil, simmer for 5 minutes

meanwhile, chop the basil

return chicken  to the skillet

add basil and mozzarella

top with Parmesan, black pepper and red pepper flakes

simmer for 5 minutes

alternatively, finish off in the oven
