Garlic Butter Salmon with Corn and Zucchini

pat the salmon fillets dry, season both sides with salt, pepper and Cajun seasoning

thinly slice the zucchini

remove corn from the cob

mince the garlic

heat oil and butter over medium high

add salmon fillets

sear 3-4 minutes per side

transfer to a clean plate

add zucchini, spread out, cook undisturbed for 2 minutes

then stir, cook for 3 minutes

stir in salt, pepper, Italian seasoning and corn kernels

add garlic, cook for 3 minutes

add lemon juice and chicken broth

stir in butter

add salmon, simmer for 2 minutes

top with chili flakes, black pepper and parsley
