Easy Noodles with Pork and Green Beans


trim the green beans and cut into small pieces

mince the garlic

slice the scallions

blanche green beans, 3 minutes

heat oil in a large pan

add ginger and garlic, cook for 2 minutes

add ground pork, break up into pieces, cook for 5 mins

remove green beans with a slotted spoon

cook the udon noodles

stir in scallions

add green beans

pour in the sauce, simmer for 5 minutes

in the meantime, fry the eggs

drain the noodles

add to the pan, toss until combined

top with toasted peanuts, serve.
