Curry Rice with Salmon

pat the salmon fillets dry,  season with salt,  pepper and paprika

chop the spinach

dice the onion

mince the  garlic cloves

heat oil and butter  over medium high,  add salmon fillets

sear 3 minutes  per side

remove from skillet

add onion and garlic,  cook for 2 minutes  over medium

add jasmine rice,  curry powder  and turmeric,  cook for 1 minute

pour in  chicken broth

add coconut milk,  simmer for  10 minutes

add spinach,  simmer for  2 minutes

add salmon,  simmer for  3 minutes

top with chili flakes  and black pepper
