Sweet Chili Chicken


slice the chicken horizontally lengthwise, pound with  a meat tenderizer

combine flour with salt, pepper & garlic powder

beat 2 eggs in a bowl

dredge chicken in flour, then dip in beaten eggs, finally in bread crumbs

mince the garlic

heat oil over medium, add chicken cutlets

cook 2-3 minutes per side, remove from skillet

cook the remaining cutlets, then wipe the skillet clean

add oil and garlic, cook for 1 minute

add sesame oil and soy sauce

pour in sweet chili sauce, bring to a simmer

add chicken cutlets

finish off with lime juice, cilantro and red pepper flakes
