Creamy Tomato  Tortellini

mince the  garlic cloves

dice the shallot

chop the basil

heat oil and butter  over medium low

add garlic  and shallot, cook for  3 minutes

add salt, pepper, paprika and red pepper flakes

stir in  tomato paste, cook for  1 minute

deglaze with  white wine, simmer for  2 minutes

pour in broth and puréed tomatoes,  simmer for 5 minutes

meanwhile, boil tortellini 2-3 minutes

pour in cream

stir in Parmesan

add basil

drain  the tortellini

add to sauce, toss to coat

top with black pepper and  red pepper flakes
