Creamy Thai Red Curry Udon Noodles

finely chop the shallot

mince the garlic

grate the ginger

add udon noodles to boiling water

heat oil in a skillet over medium low

add garlic, shallot and ginger, cook until soft

add tomato paste, stir until darker in color

stir in red curry paste

pour in coconut milk

add soy sauce, fish sauce, sesame oil, miso, sriracha and lime juice

stir to combine, simmer for 5 minutes

drain the noodles, run under cold water

add spinach, stir until wilted

add basil, black pepper and noodles

toss to combine
