Creamy Sausage and Mushroom Soup

grate the carrots

finely chop the onion

mince the garlic

tear shiitakes into smaller pieces

heat oil in a large pot

add sausage, break up into pieces

cook until brown, about 5 minutes

remove from pot

add shiitakes, cook until they start to release moisture

add olive oil, cook until brown

add garlic and onion, cook until fragrant

stir in spices and flour

pour in chicken broth, bring to a boil

add soy sauce, carrots and bay leaf cook for 5 minutes

meanwhile, cook the pasta

add sausage and milk

add chickpeas, cook for 5 minutes more

drain the pasta

stir in cream cheese

finish off with pepper, lemon juice, chili flakes and thyme
