Creamy Red Pesto Chicken

combine the ingredients for the red pesto in a food processor

blend until thoroughly combined

season the chicken

mince the garlic

finely chop the onion

heat oil and butter in a large skillet

add chicken

cook each side  for about 8 minutes

remove from skillet

add garlic and onion,  cook until fragrant

add cherry tomatoes, cook until they start to burst

press with a fork to release their juices

stir in tomato paste

add chicken broth

add spices

add red pesto

stir in cream

add chicken back to the skillet, cook for 5 minutes

top with basil leaves and sunflower seeds, serve
