Creamy Garlic Red Pepper Chicken

cut the bell pepper in half, remove veins and seeds

cut into long strips, then into smaller pieces

mince the garlic

dice the onion

chop the parsley

season the chicken  with salt, pepper and  smoked paprika

heat the oil

add pancetta

cook until crispy

remove

add butter

add chicken

sear  8-10 minutes per side

remove from skillet

add garlic  and onion, sauté until fragrant

deglaze with  white wine, simmer for  1-2 minutes

add  bell pepper, sauté for  5 minutes

add  sun-dried tomatoes

stir in  thyme  and oregano

pour in  chicken broth

stir in  tomato paste

pour in  cream

stir in  Parmesan

add chicken  simmer for  5 minutes

top with parsley  and pancetta
