Creamy Coconut Curry Spaghetti

tear shiitakes into small pieces

mince the garlic

cook spaghetti al dente in salted water

heat oil over high, add shiitakes

cook until they release moisture, add butter, cook shiitakes until golden brown

add garlic, cook until fragrant

add pepper, chili flakes, curry & Italian seasoning

stir in flour

add soy sauce, deglaze the skillet with chicken broth

pour in coconut milk, simmer over low until the spaghetti is ready

drain the spaghetti, reserving 1/2 cup cooking water

stir in Parmesan

toss with spaghetti
