Cod in Garlic Butter Sauce with Eggplant

season cod fillets on both sides with salt, pepper and paprika

finely chop the shallot

mince the garlic

halve eggplant lengthwise, cut the halfs lengthwise in two, cut into thin pieces

chop the parsley

heat oil and butter over medium high, add cod fillets

cook for 3 minutes per side

remove from skillet

add eggplant, cook for 3 minutes

add olive oil, cook until soft

add shallot and garlic, cook for 2 minutes

add salt, pepper, oregano, chili flakes, cumin, parsley and honey

add vegetable broth and butter, cook for 2 minutes

add cod fillets, simmer for 3 minutes

finish off with parsley, black pepper and lemon juice
