Coconut Gochujang Noodle Soup

chop the scallions

grate the ginger and garlic cloves

combine chicken broth with soy sauce, maple syrup, oyster sauce and lime juice

heat sesame oil over medium low, add white parts of the scallions, cook for 30 seconds

add garlic and ginger, cook for another 30 secods

add chicken broth, bring to a boil

stir in Gochujang and tomato paste

add coconut milk, simmer for 10 minutes

meanwhile, boil eggs  for 6 minutes

boil instant noodles for 2 minutes

drain, run under cold water

turn off the heat, add miso dissolved in hot water
