Coconut Gochujang Chicken Meatballs

cut broccoli into florets, then into small pieces

grate garlic and ginger

add ingredients for meatballs to a bowl, mix to combine

roll into balls

heat oil and butter in  a nonstick skillet

add meatballs

brown on all sides

remove from skillet

add garlic and ginger, cook for 1 minute

stir in spices

deglaze with chicken broth, simmer for 2 minutes

add soy sauce, fish sauce, honey and gochujang

add coconut milk and lime juice, bring to a simmer

add broccoli and meatballs

simmer for 10 minutes

finish off with cilantro, serve!
