Clams and Pork Portugese Style

rinse the clams in  cold water,  scrub the outsides  against each other  to remove any dirt

add to another bowl  with cold salted water,  transfer to the fridge

dice the onion

mince the  garlic cloves

chop the parsley

heat oil and butter  over medium high,  add ground pork

break up into pieces,  cook until browned,  about 5 minutes

add garlic and onion,  cook for 3 minutes

deglaze with  white wine,  simmer for  2 minutes

add bay leaf,  sweet paprika,  smoked paprika,  piri-piri, salt, pepper  and tomato paste

add canned  cherry tomatoes

lift the clams from  their bowl,  transfer to a new one  filled with cold water

drain and add  to the skillet,  cover and simmer  for 10 minutes  over medium low

add parsley

stir to combine
