Chorizo Mushroom Ravioli

slice the mushrooms

mince the garlic

finely chop the shallot

chop the parsley

dice the Spanish  chorizo

heat your skillet  over medium high,  add mushrooms,  cook until they  release moisture

add oil, cook  until browned,  remove from skillet

add chorizo  and butter,  cook until crispy

add salt, pepper  and garlic,  cook for 2 minutes

stir in parsley  and mushrooms

pour in cream,  simmer for  3 minutes

meanwhile,  boil ravioli  for 2-3 minutes

drain,  add to the skillet

toss to combine

top with parsley  and black pepper
