Cheesy Potato Gratin

slice potatoes into thin slices

with a mandoline

or with a sharp chef's knife

grate the cheddar and Parmesan

add spices, fresh thyme, cream and milk

add melted butter, stir to combine

add sliced potatoes

toss until all potatoes are well coated

grease a baking dish with olive oil

place potatoes upright

pour the excess mixture over the potatoes

cover with aluminum foil, bake for 60 minutes

when ready, remove foil

top with fresh sage, black pepper and red pepper flakes

bake uncovered, for  20-30 minutes more
