Buttery Orecchiette with Crispy Pancetta and Peas


mince the garlic

cook the orecchiette

add oil and bread crumbs  to the skillet

toast until golden, season with salt & pepper remove from skillet

add oil and butter

add pancetta, cook until golden brown

add garlic

stir in salt, pepper, chili flakes and peas

scoop up 1/2 cup cooking water,  drain the orecchiette

add orecchiette to the skillet

stir in grated Parmesan

add a splash of cooking water
