Braised Cajun Chicken with Potatoes

season both sides of chicken thighs  with Cajun spices

finely chop thyme leaves and parsley

chop the bell peppers

cut potatoes into wedges

mince the garlic

finely chop the onion

heat oil and butter in an ovenproof skillet over high, add chicken skin-side down, cook for 2 minutes

reduce heat to medium, cook for 10 minutes

turn, cook for 5 minutes

remove from skillet

add onion and garlic, cook for 1 minute

add bell peppers, cook for 5 minutes

stir in potatoes, thyme and parsley

pour in chicken broth, bring to a boil

add chicken

top with thyme, transfer to the oven
