Bolognese Pasta with Eggplant

dice the onion

mince the  garlic cloves

dice the carrot

dice the eggplant

melt butter  over medium low,  add onion, garlic  and carrot  cook for 3 minutes

add eggplant,  cook for 5 minutes

add ground meat,  break up into pieces

cook until brown,  about  5 minutes

pour in  beef broth

add peeled  tomatoes,  break up  into pieces

add paprika, basil,  oregano and  puréed tomatoes

simmer for  20 minutes

after that time,  boil pasta al dente  in salted water

drain  when ready

toss in pasta
