Sun-Dried Tomato Rigatoni

grate the  garlic cloves

chop the sun-dried tomatoes

chop the basil leaves

boil rigatoni  al dente  in salted water

heat oil over low, add garlic, cook for 1 minute

add tomato paste, cook for 2 minutes

add salt, pepper, paprika  and thyme

add cream, stir until combined

stir in pecorino

scoop up 1/2 cup cooking water, drain the rigatoni

toss rigatoni  and sun-dried  tomatoes

add basil  and 1/4 cup  cooking water

top with  black pepper and  red pepper flakes
