Spaghetti and Meatballs in Tomato Eggplant Sauce

combine ground meat with spices, egg yolk, bread crumbs and parmesan

roll into 1 tbsp-sized meatballs

cut eggplant into bite-sized pieces

finely chop the onion

mince the garlic

heat oil and butter in a large skillet,  add meatballs

cook until lightly browned

remove from skillet

add eggplant, cook for 5 minutes

add garlic and onion cook for 3 minutes

meanwhile, cook the spaghetti al dente in salted water

stir in salt, pepper, paprika, Italian seasoning, sugar and chili flakes

deglaze with red wine, cook for 3 minutes

add crushed tomatoes

add meatballs and olives

simmer for 10 minutes

when ready, drain the spaghetti

toss with meatballs, serve!
