Shrimp Stuffed Alfredo Shells

chop the shrimp

combine with salt, pepper and  Cajun seasoning

finely chop the onion

mince the garlic

chop the parsley

chop the sun-dried tomatoes

grate Parmesan and Gruyère

boil the pasta shells until just al dente

heat oil and butter over medium high, add shrimp, cook for 1-2 minutes

remove from skillet

add onion and garlic, sauté for 2 minutes over medium low

combine with shrimp

drain the pasta, run under  cold water

melt butter, add garlic cook for 1minute

add salt, pepper, Italian seasoning and cayenne pepper

stir in tomato paste

deglaze with fish broth, simmer for 2 minutes

pour in cream, bring to a boil

add lemon juice and parsley

stir in Parmesan, let simmer for 3 minutes

meanwhile, add Parmesan, Gruyère and egg to cream the sauce

stir to combine

add sun-dried tomatoes and shrimp mixture

fill each cooked shell with the shrimp and cheese mixture

sprinkle with Parmesan and Gruyère, bake for 15 minutes
