Sheet Pan Maple Glazed Chicken

cut the sweet potatoes  into thick half-moons

deseed and cut  the bell pepper into large pieces

cut the red onions  into wedges

combine oil with garlic,  salt, pepper, rosemary,  Cajun seasoning and  melted butter

place the vegetables and  chicken on a baking sheet,  pour over the prepared  oil mixture

toss to coat

nestle chicken  between vegetables  skin-side down

bake for 40 minutes  at 350°F/ 180°C

combine mustard  with soy sauce  and maple syrup

remove baking sheet  from the oven,  turn thighs  skin-side up

spoon maple glaze  over the chicken

sprinkle with lemon juice  bake for 20 minutes  at 400°F/ 200°C
