pat the salmon fillets dry, season both sides with salt, pepper and paprika

finely chop the shallot

mince the garlic

roughly chop the olives

chop the parsley

heat oil and butter over medium high, add salmon fillets

sear 3-4 minutes per side

remove from skillet

add garlic, shallot and capers, cook for 2 minutes

deglaze with white wine, simmer for 2 minutes

add fish sauce, oregano, salt and pepper

stir in tomato paste

add olives

add crushed tomatoes, bring to a boil

add salmon, simmer for 3 minutes

top with parsley, pepper and chili flakes
