Salmon in Creamy Red Pesto Sauce

finely chop the onion

mince the garlic

pat the salmon fillets dry, season with salt and pepper

heat oil and butter over medium

add salmon fillets

cook 3-4 minutes per side

remove from skillet

add garlic and onion, cook until fragrant

add salt, pepper and Italian seasoning

pour in crushed tomatoes

add red pesto

stir in cream cheese

add spinach

cook until slightly wilted

add salmon, cook until heated through, about 3 minutes

top with black pepper, chili flakes and parsley
