Salmon Chowder

finely chop the shallot

mince the garlic

slice the carrots

cut the potato into bite-sized pieces

remove the stems  from shiitakes, tear into small pieces

heat oil in a large heavy-bottomed pot

add shiitakes, cook until they start to release moisture

stir in butter, cook until brown

add garlic and shallot, cook for 2 minutes

add spices & fish sauce

stir in flour

deglaze with white wine

add carrots and potato

pour in broth

add bay leaf, cover, simmer for 20 minutes

meanwhile, cut salmon into large pieces

chop the parsley and chives

when ready, add cream

add parsley and salmon pieces

stir gently, simmer for 3 minutes

finish off with  black pepper and red pepper flakes
