gochujang chicken stew


cut chicken thighs into bite-sized pieces

to a bowl, add chicken,  grated garlic, soy sauce,  sesame oil, ginger,  brown sugar and mirin

toss to combine, set aside  to marinate

deseed and  roughly chop  the bell pepper

chop the scallions

heat oil over medium,  add pepper,  cook for 3 minutes

add chicken, cook for 3 minutes

stir in Gochujang

add scallions

pour in broth,  cover, simmer  for 15 minutes

meanwhile,  boil rice according  package directions

when ready,  top with scallions and black pepper
