Eggplant Tomato  Pasta with Bacon

cut the eggplant into thin slices

cut into strips

dice into small pieces

mince the garlic

finely chop the onion

heat oil in a skillet

add breadcrumbs

toast for 3min

add halloumi, salt & pepper cook for 2min

remove from pan

heat olive oil

add bacon

cook until golden brown

remove from pan

add eggplant

add some extra oil, cook for 5min

add garlic and onion, cook until fragrant

add seasoning

cook the pasta

add tomato paste

add crushed tomatoes, simmer for 10min

add parsley

scoop up some cooking water

drain the pasta

add bacon

stir in parmesan and cooking water

toss with pasta
