Creamy Tomato  Tortellini

mince the garlic

finely chop the shallot

chop the basil

heat oil and butter  over medium low

add garlic and shallot, cook for 3 minutes

add salt, pepper, paprika and chili flakes

stir in tomato paste, cook for 1 minute

add white wine, simmer for  2 minutes

pour in broth and puréed tomatoes,  simmer for 5 minutes

meanwhile, boil the tortellini 2-3 minutes

pour in cream

stir in Parmesan

add  chopped  basil

drain the  tortelloni

add to sauce, toss to coat

top with  black pepper and chili flakes
