Chunky Peanut Butter Drumsticks

sprinkle spice mixture over chicken, toss to coat

mince the garlic

grate the ginger

chop the onion

combine the ingredients for the peanut butter sauce

heat oil in a pan

add butter

add drumsticks

cook until browned, 10-15 minutes

remove from pan

add garlic, onion and ginger

deglaze with 2 tbsp water

add peanut sauce, bring to a boil

stir in spinach

sprinkle with lime juice

place drumsticks back into the pan

transfer to the oven, bake for 30 minutes

in the meantime chop the peanuts

toast peanut topping in a dry skillet

add sesame seeds & spices

when ready,  sprinkle drumsticks with peanut topping
