Cheesy Potato Gratin

slice potatoes into  thin slices using  a mandoline

you can also use  a sharp chef's knife

grate the cheddar and Parmesan

add salt, pepper,  dried onion,  garlic powder, paprika,  cayenne pepper, thyme,  cream and milk

add melted butter, stir to combine

add sliced potatoes

toss until well coated

grease a baking dish with olive oil

place potatoes upright

pour the excess  cheese mixture over the potatoes

cover with  aluminum foil, bake for 60 minutes  at 400°F/ 200°C

when ready, remove foil

top with fresh sage, black pepper and chili flakes

bake uncovered,  for 20-30 minutes
