Butternut Orzo with Roasted Broccoli


mince the garlic

finely chop the shallot

cut broccoli into florets, then into bite-sized pieces

combine oil with miso, maple syrup and spices

add broccoli, toss until coated

spread on a baking sheet, bake for 15-20 minutes

heat oil in a large skillet

sauté garlic and shallot until fragrant

add orzo and spices, toast for 1 minute

add white wine, simmer for 2 minutes

pour in chicken broth, bring to a simmer, cover and cook for 10 minutes

stir occasionally

when ready, add puréed butternut

stir to combine, simmer for 5 minutes

stir in Parmesan

turn off the heat, cover, let stand for 2-3 minutes

top with roasted broccoli

finish off with black pepper and chili flakes
