finely chop the shallot
mince the garlic
tear shiitakes into smaller parts
grate the ginger
cut broccoli into florets, then into bite-sized pieces
chop the scallions and cilantro
combine ingredients for the meatballs
roll into 2 tbsp-sized meatballs
heat oil & butter in a pot
add meatballs
cook until browned
remove from pot
add shiitakes, cook until crispy
add garlic, shallot and ginger
stir in red curry paste and spices
add chicken broth, bring to a boil
add soy sauce, fish sauce, sesame oil and lime juice
meanwhile, cook udon noodles
add meatballs, cook for 5 minutes
join the club
add coconut milk, bring to a boil
add broccoli, cook for 3 minutes

drain the noodles, serve
