Pasta with Sun-Dried Tomato Ricotta Pesto

add ingredients for the ricotta pesto to your food processor

purée while adding oil

blend until smooth

mince the garlic

cook pasta in salted water

heat oil in a skillet

add pancetta, cook until it starts to brown

add pine nuts,  cook for 5 minutes

add garlic, cook until fragrant

add pesto, stir until combined

drain the pasta, reserve 1/2 cup cooking water

add pasta and cooking water to the sauce, toss until combined
