add tomatoes to a baking sheet, sprinkle with olive oil

season with salt & pepper roast for 15 minutes

mince the garlic

finely chop the shallot

add pine nuts to a hot skillet, toast until golden

remove from skillet

add olive oil

sauté garlic and shallot until fragrant

stir in orzo

pour in milk and vegetable broth

lower the heat, simmer for 10-15 minutes

stir occasionally

when ready, stir one more time

stir in Parmesan

season with salt & pepper

finish off with roasted tomatoes and their juices. Top with pine nuts.
